Chicken and Sweet Potato W/ Mushrooms

About the Recipe

These meals are meant to be simple but still taste great. I think that when we are trying to create new healthy habits we often focus to much on what we need to add. I think we get so caught up in adding new things in order to get into a better routine when we should really take a look at what we can take away.

This is the goal with my cooking. I found that I would try to cook all these new meals in order to eat better but I would never stick with it. Discipline is a very hard skill to learn as is, there is no need in making it more difficult by adding a bunch of cooking time to your day or time shopping in a store to get a bunch of ingredients you don't have. I want to show people they can work with the things they have and typically eat, just take the extra things out and odds are it will be better for you. This recipe doesn't need sauce or anything else that adds sugar and calories. It is simple and easy to make and not so far out of your comfort zone that you can't maintain it. You will still need discipline no doubt, but this is a simple way to start building it.

Ingredients

  • 4 Chicken Breasts (Or how ever many you want)

  • Mushrooms ( I get the pre cut packaged ones to make it easy)

  • Sweet Potatos

  • Olive Oil

  • Balsomic Vinagar

  • Seasonings of choice

Preparation

Step 1


Set oven to 375 degrees and line baking sheet with tin foil. Place chicken breasts on sheet and coat with a bit of oil and whatever seasoning you choose! Place in oven for about 20-25 minutes. If cooking from frozen you will need to cook them longer around 40 minutes usually.


Step 2


Heat olive oil in large stove top pan. Cut up onion while this heats then add the mushrooms and onions to the pan with oil. Let cook for a few minutes until sautéed all together. Then add balsamic vinager, I usually use a serrano honey flavored one that I love!



Step 3


While these two are cooking you can cut your sweet potatos. I usually do rounds or wedges then coat the potatos in olive oil and a seasoning of choice. Place the potatos in the air fryer for about 15 to 20 minutes. If you do not have an air fryer, you can also lay them out on a baking sheet and put them in the oven with your chicken.



Step 4


When all done cooking place one chicken breast on a plate and top with your sautéed onions and mushrooms. Then place a few potato rounds on the side and you are ready to enjoy!


After that clean the kitchen, place food in containers, and you have lunch for the next few days!

Balsamic Vinager:


I love using flavored balsomic vinegars when cooking. I just recently ran out of the serrano honey flavored one I have which was my favorite to use. If you have never done this I highly recommend doing it! It is such a fun experiance and there are so many health benifits to high quality oils. It is a great "date day" activity for couples as well.
